Raclette

A semi-soft cheese created nearly 400 years ago with one life purpose: to be melted. The smell might seem strong (i.e. stink!) but the flavor is fairly mild. Slather over small roast potatoes and sautted onions and slurp it up in its gooey glory. Rich and comforting. Originally from Switzerland though now made there and France. The name comes from the French verb "racler", to scrape.
